Hey, friends! I hope that life has been treating you well this week :-) It’s F•R•I•D•A•Y, which for most of us, means it’s officially the weekend. Now, I know that normally everyone loves their time off on the weekends (I know I do) but I am here to make every day great for y’all!! That’s why I’ve decided to share my version of a healthy (well, healthier than the bucks) pumpkin spice latte with you. My main goal in creating this recipe was actually to save money for myself. After all, I have a Starbucks that is 1/10 of a mile away from my dorm room, so the ever looming holiday season has been looking EXPENSIVE. I also wanted to make a healthier version with more natural ingredients, for obvious reasons. All this being said, the main goals were to keep it simple, healthy, and reasonably priced. Healthy doesn’t always have to equal expensive!! 😆 I hope that you make this, and if you do share it and tag us! Hopefully it will be useful and help you get through those mid-week ruts! Nothing is better at curing mine in the fall than a PSL 🎃☕️

Lets start by gathering all of the ingredients.

You will need:

2 shots of espresso
1/2 cup whole milk (or any dairy substitute that you prefer)
3 tbsp pumpkin puree
1/2 tsp pumpkin pie spice
1/2 tsp vanilla
Maple Syrup (add to taste 2 tsp-1tbsp)
Optional toppings: milk foam with cinnamon, whipped cream with pumpkin pie spice, caramel, etc.

Now that we have all of our ingredients, we can start creating!

First, combine the 1/2 cup milk 🥛 and the 3 tbsp pumpkin 🎃 purée, stirring together in a mug

Next, warm the mixture up. Either by stovetop until warm, or microwave (30-45 sec)

Stir mixture again.

After you have stirred it you’re going to want to take a frothier and froth the warm mixture together for 30 seconds. This prevents chunks of pumpkin purée from not combining with the milk. If you don’t have a frothier just replace with a whisk or a fork.

After you have completed frothing, we can add more ingredients: 1/2 tsp pumpkin pie spice, 1/2 tsp vanilla, and maple syrup to taste. I think that the mixture is sweet enough with the vanilla, but if I have a sweet tooth, I will add 2 tsp of the syrup.

Stir everything one last time.

Now, the fun part! Adding the espresso :~) If you don’t like espresso you can replace the 2 shots with a desired amount of coffee. I prefer the espresso, as this is a sweeter drink.

If you want to be even more extra and Starbucks-esque, then you can add some extra frothed milk on top with a sprinkle of pumpkin pie spice or cinnamon 💡

Some other options are whipped cream and cinnamon or caramel (or both) :)

And there you have it folks, Voila! Your drink is complete 🤩 I hope you enjoy it

Again, please share any recreations, I would truly love to see them 😎 and don’t forget to tag us!

Until next time,

xoxo,

Ali ❤️
